Yes you can extend your visa ranging from 1 month up to 3 months based on your existing visa type and situation. You can visit one of the immigration offices in Vietnam with required documentation and pay the needed fees. If you do overstay for a day or two you will have to pay a fine per day for overstaying and either pay an extension fee if you plan on staying longer or exit visa fee if you plan to exit the country. In case you plan to exit Vietnam right after overstaying, you can pay at the airport too. As per the current immigration policy you won't be able to transfer or change your visa type from within Vietnam.
